Mother’s Day for the Busy Dad

It seems a little self-serving but I like helping my Mother’s Day get off on the right foot. My husband always asks me, “Kathey Raskin, what can I do to make your day more special?” It’s hard not to fall more in love with him when he asks, but let’s be real, it’s Kathy Jo’s kitchen for a reason. He can’t cook to save his soul. So, I always give him a fool-proof recipe that even the most hopeless can follow. He’s been getting better every year so I’m going to give him a little bit of a complicated, but quick recipe.

History

The modern holiday of Mother’s Day was first celebrated in 1908, when Anna Jarvis held a memorial for her mother at St. Andrew’s Methodist Church in Grafton, West Virginia...

Easter Smores

I get asked, “Kathey Raskin, what’s your favorite holiday?” It’s always so difficult to answer, but I usually pick the most recent, but I do have an affinity for Easter. Since its origins, Easter has been a time of celebration and feasting and many traditional Easter games and customs developed, such as egg rolling, tapping, cascarones or confetti eggs, and decorating. Today Easter is commercially important, seeing wide sales of greeting cards and confectionery such as chocolate Easter eggs as well as other Easter foods. Even many non-Christians celebrate these aspects of the holiday while eschewing the religious aspects. Here in Kathey Jo’s Kitchen, we can help you get prepared for all the best of this holiday.

Yes, I had to start with the sugary sweet marshmallow treats...

Odd Foods

My name is Kathleen Raskin, and as a kid, I can remember learning about vegetables, fruits and other edible things. Orange was not only a fruit but the color of it. Potatoes are brown, and everything else you learn in kindergarten. There comes a point in life, however, that you learn that everything isn’t inside of a neat little box. Apples can be green and red. Grapes can be purple, red or green. It doesn’t quite destroy your world view, but it definitely turns your world upside down. I remember when my mom fed me my first blood orange. I was very confused, but then I took out some books in the library. I was amazed and I want to share some of my favorite ones with you.

Vegetables and Starches

One of my now favorites that I have discovered is purple potatoes...

Food Allergies and How to Cook for Them

Chances are, you have gone to a restaurant and seen notes on the menu involving peanuts, wheat or something unique. This is usually to protect a restaurant from lawsuits, and protect their patrons from an unpleasant evening. Cooking 101

If you are anything like me, Kathey Raskin, you had to start teaching yourself how to cook from the bottom up. My grandmother could, and would burn garlic bread without breaking a sweat. Let’s not even talk about what happened to her steaks on the grill. Let’s just say that there are some things that ketchup can’t even fix. Her stuffing is still stuff of legend and you will thank yourself that you never have to choke it down. My mom didn’t exactly have time to cook every night so I’ve had to teach myself every step of the way, and I will gladly share some of my best tips to be successful in the kitchen.
