Unique Foods in Every State: Alaska

The huge selection of food makes our nation that much more incredible, and I know that my family overseas always asks me, “Kathleen Raskin, when are you going to give me the amazing recipes?” I have travelled through many states and I have found the perfect recipes that are honestly the best of the best. Many of the foods have been inspired by the local flavor. Some of Alaska’s popular annual events are the Iditarod Trail Sled Dog Race that starts in Anchorage and ends in Nome, World Ice Art Championships in Fairbanks, the Blueberry Festival and Alaska Hummingbird Festival in Ketchikan.  Now the recipes I’ve found may seem a little odd, but here in Kathy Jo’s Kitchen, you can trust that they are the best.

Odd Foods

My name is Kathleen Raskin, and as a kid, I can remember learning about vegetables, fruits and other edible things. Orange was not only a fruit but the color of it. Potatoes are brown, and everything else you learn in kindergarten. There comes a point in life, however, that you learn that everything isn’t inside of a neat little box. Apples can be green and red. Grapes can be purple, red or green. It doesn’t quite destroy your world view, but it definitely turns your world upside down. I remember when my mom fed me my first blood orange. I was very confused, but then I took out some books in the library. I was amazed and I want to share some of my favorite ones with you.

Vegetables and Starches

One of my now favorites that I have discovered is purple potatoes...

Food Allergies and How to Cook for Them

Chances are, you have gone to a restaurant and seen notes on the menu involving peanuts, wheat or something unique. Cooking 101

If you are anything like me, Kathey Raskin, you had to start teaching yourself how to cook from the bottom up. My grandmother could, and would burn garlic bread without breaking a sweat. Let’s not even talk about what happened to her steaks on the grill. Let’s just say that there are some things that ketchup can’t even fix. Her stuffing is still stuff of legend and you will thank yourself that you never have to choke it down. My mom didn’t exactly have time to cook every night so I’ve had to teach myself every step of the way, and I will gladly share some of my best tips to be successful in the kitchen.

Tips for a Successful Dish

As I’ve mentioned before, dear reader, I don’t know a whole lot about cooking thanks to my family surroundings. “Kathleen Jo Raskin, this is wonderful. How did you do it?” is always heard around the dinners I cook for our gatherings. Contrary to what people tell you, cooking is more than just following a recipe. I remember some of my first failures to this affect involving too much salt and inedible chicken. It’s a devastating blow to have to order pizza when a meal doesn’t work out, but you just must jump back up on the saddle and try again.
