Wacky Lemon Cookies

Here in Kathey Jo’s Kitchen, my husband Rob and I know the tastes of many delicious desserts, and we aim high when it comes to sharing them with the world. Lemon cookies may sound wacky at first, hence the name of this recipe, but as soon as they hot your tastebuds, we have a feeling you’ll be a believer!
Pick up a box of lemon cake mix the next time you go to the store. The other ingredients you likely already have, and those you don’t are easily acquired at the nearest grocer. You don’t need to be a professional cook, chef, or baker to bring these sweet treats to life, either. It’s because of what I’m doing people are finally preparing this recipe, finding themselves and those closest to them pleasantly surprised! Don’t hesitate to make a batch today.
- 1 package Super Moist lemon cake mix
- 1/2 cup vegetable oil
- 2 eggs
- 1 tub Soft Whipped lemon ready-to-spread frosting
- OR
- 1 tub Rich & Creamy lemon ready-to-spread frosting
Heat oven to 350º. Grease cookie sheet. Mix cake mix (dry), oil and eggs in large bowl with spoon until dough forms.
Drop dough by teaspoonful’s onto cookie sheet. Bake about 8 minutes or until set. Remove from cookie sheet to wire
rack. Cool completely. Frost.
