Applesauce-Crunch Cookies
Bake these delicious applesauce crunch cookies using all ingredients from your pantry staples. At Kathey Jo’s Kitchen, we love using beloved ingredients to create a desert that will be loved by everyone. My husband Rob and I absolutely love these cookies because they remind us of an apple pie, from the taste of the apples to the deep caramelized undertone flavors of the brown sugar, these are a must try!
Once ready, you’ll notice they will cloud up. The interior will be moist, yet fluffy, which will be perfect paired with a cup of coffee in the morning or milk for the kiddos. The star of these cookies is definitely the ½ cup of applesauce used, but the vanilla and brown sugar sure complement the flavors. The recipe also calls for 2 cups of granola, which give the perfect soft and chewy texture.
If you are looking for an even healthier version of these cookies, consider using less of the brown sugar. Applesauce is already naturally sweet, so using less sugar will not compromise the deliciousness of the cookies. A tip I like to give for this recipe is to always make sure there is close to no indentation in the center when you remove them from the oven to determine if they are ready. Once they are, let them cool for two minutes and enjoy!
INGREDIENTS
- 1 1/4 cup packed brown sugar
- 1/2 cup shortening
- 1 teaspoon vanilla
- 1 egg
- 1/2 cup applesauce
- 2 cups all-purpose flour
- 2 cups granola
- 1/2 teaspoon baking soda
- 1/2 teaspoon salt
DIRECTIONS
- Heat oven to 375 degrees.
- Beat brown sugar, shortening, vanilla and egg in large bowl with electric mixer on medium speed, or mix with spoon.
- Stir in applesauce.
- Stir in remaining ingredients.
- Drop dough by rounded tablespoonfuls about 2 inches apart onto ungreased cookie sheet.
- Bake 11 to 13 minutes or until almost no indentation remains when touched in center.
- Cool 1 to 2 minutes; remove from cookie sheet to wire rack.
