The huge selection of food makes our nation that much more incredible, and I know that my family overseas always asks me, “Kathleen Raskin, when are you going to give me the amazing recipes?” I have travelled through many states and I have found the perfect recipes that are honestly the best of the best. Many of the foods have been inspired by the local flavor. Some of Alaska’s popular annual events are the Iditarod Trail Sled Dog Race that starts in Anchorage and ends in Nome, World Ice Art Championships in Fairbanks, the Blueberry Festival and Alaska Hummingbird Festival in Ketchikan. Now the recipes I’ve found may seem a little odd, but here in Kathy Jo’s Kitchen, you can trust that they are the best.
Reindeer Pizza: Ingredients
This is a specialty from Norway and Finland and is exactly what it sounds like.
Ingredients:
Pizza Dough
1 tablespoon dry yeast
1.5 cups warm water
50 ml oil
Salt
3 cups flour
Tomato Sauce
4 tablespoons tomato puree
½ teaspoons salt
Pinch of sugar
Drop of oil
Black pepper
Oregano
Fillings
1 cup mozzarella cheese
2/3 cup grated Gouda cheese
1/3 cup smoked reindeer in thin slices
½ sliced purple onion
½ thinly sliced jalapeno
2-3 eggs
Garnishes
½ bunch coriander
Smoked paprika oil
1 tub Smetana (or sour cream)
Smoked paprika oil
3 tablespoons olive oil
½ teaspoon smoked paprika seasoning
1 teaspoons salt
Sugar
Preparation:
Dough:
Mix yeast with warm water and add salt and oil.
Add flour in small doses.
Leave the dough to sit under a cloth.
Once it has risen, roll into 1-2 long pizza crusts.
Sauce:
Combine all ingredients in a small bowl, set aside.
Smoked Paprika Oil:
Combine all ingredients in a small bowl, set aside.
Cooking
Add tomato sauce on top of dough.
Then other fillings and the cheese.
Bake in 200°C oven for 10–15 minutes.
Season with smoked paprika oil, Smetana and fresh coriander leaves.
Cut, and serve while warm.
