The Ultimate Oatmeal Cookie

The Ultimate Oatmeal Cookie

When it comes to cookies, sometimes you can’t beat the classics. Some days, there’s nothing better than an old-fashioned oatmeal cookie, and in Kathey Jo’s Kitchen, my husband Rob and I know this better than anyone! Needless to say, there are already a ton of recipes out there, online and in cookbooks, for making them. There’s certainly no right or wrong way to go about it, but I’ll gladly share with you what works best for me.

Will the Ultimate Oatmeal Cookie live up to its name? I have a feeling that when you follow my instructions and prepare them for yourself and your family, the reactions from everyone will say it all, not to mention the fact they’ll be going back for seconds, and possibly thirds! It doesn’t take long to prepare or make them, maki...

Chicken Noodle Soup

Chicken Noodle Soup

A comfort food that’ll never get old is chicken noodle soup. Whether you need a pick me up, are recovering from a common cold, or simply want the delicious warmth of soup filling up your belly, this recipe will do the trick. The added flavors feel like a hug to your body that will definitely satisfy your hunger!

This recipe gives you a couple options when it comes to the pasta. You could either go with four ounces of uncooked egg noodles or one cup of uncooked pasta. They both work and frankly, are both quite tasty, so the decision is completely up to you! You’ll also need 4 cups of cooked chicken, preferably cut into cubes. Remember, all your veggies should be appropriately cut into sizes that closely parallel the chicken.

To start the recipe, it’s recommended to b...

Chicken-Fried Steak

Chicken-Fried Steak

Chicken fried steak is another favorite here at Kathey Jo’s Kitchen. It’s a southern dish that could not be tastier. My husband Rob and I love making this dish any time in the year, including the holidays. Sometimes it even gets requested for Thanksgiving by our family members, which is already saying a lot about the dish!

If you’ve never had this dish, you’ll be surprised to know that the recipe involves no actual chicken meat. Instead, it calls for boneless round steak. They are dipped into the egg mixture, coated with the cracker crumbs, and fried. It’s made very similar to fried chicken, but of course, it’s actually steak not chicken. For best results, remember to cut the meat into ½ inch thickness and pound each piece to tenderize.

This three-ingredien...

Calypso Shrimp

Calypso Shrimp

Satisfy your seafood cravings with this calypso shrimp recipe. It’s a deliciously tangy, but savory meal that could be served for lunch, or a fancy dinner. The best part is that preparing the shrimp only requires four simple ingredients. At Kathey Jo’s Kitchen, we prepare the shrimp with orange juice and peel, fresh (or dried as alternative) thyme leaves, red onion, and garlic. Yes, very simple ingredients, but a bomb of a flavor no one will resist.

The bean salsa is one I often make—mostly because my husband Rob loves to combine it with many other meals. The salsa is made with black beans, rinsed and drained...

Apricot-Rosemary Salsa

Apricot-Rosemary Salsa

Elevate your main course meals with this delicious apricot-rosemary salsa. Here at Kathey Jo’s Kitchen, we always try to level up what we serve our families, and this sauce really does level up any meal! It truly takes a savory meal to a sweet and sensational point where you will combine many of your future meals with this simple made sauce.

Besides being a delicious sauce, it’s also pretty simple to make. The star ingredient is, you guessed: apricots. You’ll need both apricot nectar and dried apricots, ½ cup of the dried version and 5 ½ ounces of the nectar. Likewise, you’ll want to include dried rosemary leaves and fresh rosemary leaves. The flavors balance out perfectly with the hint of ground cinnamon and ginger.

The recipe also calls for Roma tomatoes...

Boiled Dinner

Boiled Dinner

Making a boiled dinner is probably one of the easiest meals you could possibly make. How? Well, for starters, yes, it may be a little time consuming because it requires some hours to cook, but in reality, you don’t always have to be right there in front of the pan every second. There is a lot of waiting involved, but the waiting is what truly makes the flavors from the meat and veggies come forward.

The recipe calls for up to three pounds of pork spareribs. These are one of my favorites to cook with because when you cook them properly, they melt off the bone effortlessly. Since they are a tough meat to begin with, it’s best to cook it slowly, which is perfect for boiled dinners! If for whatever reason you cannot find this cut, you could also use ham on bone...

Apricot-Filled Blueberry Biscuits

Apricot-Filled Blueberry Biscuits

For those of you that love fruit filled pastries, try apricot-filled blueberry biscuits! I know it’s a mouthful, but they are so delicious and easy to make. These are such a fun take on pies, only easier. At Kathey Jo’s Kitchen, I like making these during the holidays. You could make these festive by utilizing cookie cutters, such as hearts for Valentine’s Day, or eggs for Easter.

Impress your loved ones with this perfect filling combination. I recommend fresh blueberries, but if you don’t have access to them, frozen blueberries will work just fine. As for the apricot, jam spreading is perfect. If I have fresh apricots in my fruit bowl, I’ll sometimes dice some in there for some extra texture...
