Chocolate Shortbread Cookies

Chocolate shortbread cookies are a staple for Valentine’s Day. These homemade cookies bring a delicious twist to the already delicious shortbread cookies. They are crisp, buttery, and now sprinkled with semisweet chocolate chips throughout the cookie. Dunk them in your coffee, eat them as a snack, or share them with your significant other during those special days.

One of my favorite cookies have always been shortbread cookies. Rather than completely changing the recipe I know and love, I decided to enhance it. The chocolate chips circulating the tasty cookie make a “melt in your mouth” moment. Not to mention they are easy to make! The ingredients are simple and easily available. In fact, it’s likely you’ll have them in your kitchen already.

I’ve made these chocolate shortbread cookies during a couple different holidays already. To spice things even more up, I’ve shaped them into an appropriate shape making them festive and fit right into the special day. Sometimes I’ll craft the shape by utilizing cookie cutters or molding them by hand. One thing’s for sure, here at Kathey Joe’s Kitchen, we can’t put them down and you won’t either!

INGREDIENTS

  • 2 cup margarine or butter — softened
  • 1 1/2 cup packed brown sugar
  • 4 cups all-purpose flour
  • 2 cup miniature semisweet chocolate chips

DIRECTIONS

  1. Heat oven to 350 degrees.
  2. Mix margarine and brown sugar in large bowl until well blended.
  3. Stir in flour.
  4. Stir in chocolate chips.
  5. Roll dough into 1 1/4-inch balls.
  6. Place about 3 inches apart on ungreased cookie sheet.
  7. Flatten to about 1/2-inch thickness with greased bottom of glass dipped in sugar.
  8. Bake 12 to 14 minutes or until set.
  9. Cool slightly; remove from cookie sheet.
