Best Buttermilk Pancakes
Here in Kathey Jo’s Kitchen, I know how important it is to give your family a good meal when they start the day. They say breakfast is the most important meal of the day, and my husband Rob and I agree. That’s why I believe it’s essential to give your loved ones something delicious and filling that their day can start with. It’s hard to top breakfast classics, and nothing tops well-made pancakes. You won’t be let down with the recipe I’m here to offer you.
There are countless ways that one can prepare pancakes, but this the recipe that I’ve used for years, and they’re delicious as ever. Perhaps the best thing about making pancakes is just how many different ways there are that you can keep things delicious and interesting. Try adding things like fruits and chocolate chips to the batter, and you’ll keep those you’re feeding interested and their tastebuds satisfied!
2 egg
2 cup all-purpose flour
OR
2 cup whole wheat flour
2 cup buttermilk
2 tablespoon granulated sugar
OR
1 tablespoon packed brown sugar or 1tsp. Vanilla
4 tablespoons vegetable oil
2 teaspoon baking powder
1 teaspoon baking soda
1/4 teaspoon salt
Beat egg in medium bowl with hand beater until fluffy. Beat in remaining ingredients just until smooth. (For thinner
pancakes, stir in 1 to 2 tablespoons milk.)
Heat griddle or skillet over medium heat or to 375º. Grease heated griddle, if necessary. To test griddle, sprinkle with
a few drops of water. If bubbles jump around, heat is just right.
