Brown Sugar Oatmeal Muffins
This cozy recipe is made with the ultimate breakfast ingredients many individuals, like me, love. I for one, can have some delicious oatmeal any morning. I love the texture and the warmth I feel as it fills my belly. Of course, this muffin is not limited to morning time, you can serve them as a desert or a mid-day snack between meals. My favorite way to eat these muffins are for breakfast, with any kind of berries, mimicking a morning oatmeal.
These brown sugar oatmeal muffins are a sophisticated take on oatmeal. Not only are they packed with chopped nuts, pecans, or walnuts (your choice), but they have caramel undertones from the sweetness coming from the brown sugar. The crunch of the nuts and tasty flavors from the oats are definitely the perfect showstoppers of this treat.

If you prefer to eat them at home, you could totally have them with a dab of peanut butter, some fruit, or even topped with Nutella. However you decide to consume them, I know you will love them. INGREDIENTS
- 1 cup quick-cooking oats
- 1/2 cup milk
- 1 cup packed brown sugar
- 1/4 cup margarine or butter — melted 1 egg
- 1 cup all-purpose flour
- 1/2 cup chopped nuts pecans or walnuts
- 2 teaspoons baking powder
DIRECTIONS
- Heat oven to 400 degrees.
- Grease 12 medium muffin cups, 2 1/2 × 1 1/4 inches, or line with paper baking cups.
- Mix oats, milk and brown sugar in large bowl; let stand 5 minutes.
- Add margarine and egg; blend well.
- Stir in remaining ingredients just until moistened.
- Fill muffin cups two-thirds full.
- Bake 15 or 20 minutes or until toothpick inserted in center comes out clean
