The best part is that most, if not all of the ingredients are likely to already be in your pantry. Yes, very simple ingredients yet they come together for this banger of a cookie.

Although there are 6 steps in this recipe, two of them are pretty major. In my experience making these no bakes (many, many times), heating the chocolate chips and other ingredients together and refrigerating the done cookies are two pivotal steps. When heating the chocolates, it’s important to maintain the heat at medium. I know it could be tempting to turn up the heat but trust me it’s not worth it. What could potentially happen is that the bottom will burn, and the flavors will be compromised. You could end up with a burned undertone that messes with the entire taste. Instead, be patient and keep a close eye on the pan as the chocolate melts.

Another important step is assuring that the cookies are refrigerated long enough. I’d say to give them an hour. This is a pretty significant part of the process because since there is no baking involved, this is the way the cookies will stay intact and not fall apart. If you take them out too early, you could end up with an inconsistent cookie that is too soft, likely in the middle. You’ll thank me when you are enjoying these perfectly delectable no bakes.

INGREDIENTS

  • 1 (6 ounce) package semisweet chocolate chips (1 cup)
  • 1/4 cup light corn syrup
  • 1/4 plus 3 tablespoons cup peanut butter
  • 2 tablespoons milk
  • 1 teaspoon vanilla
  • 2 cups quick-cooking oats
  • 1 cup peanuts

DIRECTIONS

  1. Cover cookie sheet with waxed paper.
  2. Heat chocolate chips, corn syrup, peanut butter, milk and vanilla in 3-quart saucepan over medium heat, stirring constantly, until chocolate is melted and mixture is smooth; remove from heat.
  3. Stir in oats and peanuts until well coated.
  4. Drop mixture by rounded tablespoonfuls onto waxed paper.
  5. Refrigerate uncovered about 1 hour or until firm.
  6. Store covered in refrigerator.
