Personally, this chicken tomato rice soup is one of my favorite comfort foods. Not only does it feel like a warm hug to my entire body, but it’s delicious! I know it’s a winning recipe in my household when the kids drink the broth. With the flavorful ingredients coming from the chicken, thyme, parsley, and classic tomato, you really cannot lose.

Another reason to try this recipe is because of how easy it is. With three simple steps, you don’t have to be an expert to get it right. Simply combine the ingredients in a saucepan and bring it to a broil. You’ll want to simmer for up to 25 minutes and add rice aftrer, simmering for an additional 10 minutes. An exciting way to serve this is with parmesan cheese, but definitely optional.

INGREDIENTS

  • 3 quarts chicken broth
  • 2 1/2 cups cooked, shredded chicken
  • 28-ounce jar stewed tomato
  • 1 8 oz jar tomato sauce
  • 2 tablespoons chopped fresh parsley
  • 1/2 teaspoon thyme
  • 3 cups cooked rice
  • Grated Parmesan cheese

DIRECTIONS

  1. In a large saucepan, combine first 5 ingredients.
  2. Bring to a boil; reduce heat and simmer 20 to 25 minutes.
  3. Add rice; simmer 10 minutes.
  4. Serve with cheese.
