Chicken and Asparagus Rounds

Chicken and Asparagus Rounds

This recipe is perfect for weeknights after a long day at work. It’s a simple, yet flavorful affair that does not take too long to prep, not to mention is a rather healthy meal. The recipe calls for 4 small skinless, boneless chicken halves, which is close to two pounds. Make sure to remove excess fat from the chicken and proceed to flatten the breast to ¼-inch of thickness. For flavor, the chicken in this meal will be seasoned with salt, onion powder, garlic powder, and dill weed.

Here at Kathey Jo’s Kitchen we elevated this meal with delicious asparagus and red bell peppers. All you’ll have to do here is cut the red peppers into ¼-inch strips, drain the asparagus spears, and place them crosswise on the large end of the chicken breast half...

Aloha Chicken

Aloha Chicken

Get ready to indulge into a sweet but savory chicken that will be sure to satisfy the crowd sitting at your table. One of the reasons I love this chicken is because of the pineapple undertone flavors. I’m one of those that do not mind Hawaiian pizza, in fact it’s a top choice whenever I order. Even if you are not a huge fan of sweet chicken, this meal is the perfect amount of sweet and savory ratio ensuring satisfaction.

At Kathey Jo’s Kitchen, we like to simmer the chicken in water with bouillon cubes for ultimate taste, preferably chicken bouillon cubes. It’s very similar to broth, only it’s a dehydrated broth in powder form. This means you could substitute one for the other—use the broth rather than the cubes or vice versa. Either will work.

Crispy Baked Catfish

Crispy Baked Catfish

If you have some catfish fillets in your fridge, this Kathey Jo’s Kitchen recipe is a must try! The delicious hint of spice from the chili powder, paprika, and pepper coated right beneath the cornmeal mixture, are the perfect seasoning mixtures. The flaky finish will give the right amount of crunch with a moist center. I call that, the perfect bake.

Some tips I like to give for first timers, is cutting the catfish fillets into four individual pieces. At this point you will wash the sliced pieces and soak them in about ¼ cup of pineapple juice. If you are making more than what the recipe calls, simply double it, or fill with pineapple juice until the catfish fillets are completely submerged. This will help eliminate any fishy taste that could be unpleasant.

Easy Sesame Beef

Easy Sesame Beef

This sesame beef recipe is one that took me some time to perfect. Not because of the spice tolerance or the tenderness of the steak, but rather because of the undertone flavors I wanted to taste with every single bite. I spent hours in Kathey Joe’s Kitchen and made sure the beef had everything I wanted and more.

I love making this recipe because there are so many ways to serve it to my loving family. Whether it’s a side or a main course, it always seems to stand out. For an enjoyable prepping, make sure the beef is thinly sliced, cut diagonally across the grain. The trick is to slice the beef partially frozen, maybe consider 1 ½ hours for a fast and easy cut.

My favorite ways to season and prepare the beef for ultimate flavors is with soy sauce, chopped green onions, ...
