Plans and Projects: Bring on the Spring with These Salads

Hello from Kathey Jo’s Kitchen! I am Kathleen Raskin of Las Vegas, and if you are anything like me, you can’t wait for spring either! Leo Tolstoy wrote in Anna Karenina that “spring is the time of plans and projects.” Hopefully, you’ve been making headway on your New Year’s resolutions. I’ve been making baby steps in Kathey Jo’s Kitchen myself: meal planning on Sundays, for one. But don’t wait for an arbitrary date to begin. You can wipe your slate right now. Start where you are, with what you have. When you’re internally motivated to pursue something, the more likely you are to achieve your goals. Crispy Sesame Salad Stack

Ingredients

  • 1 (8-oz.) package mixed salad greens, wash thoroughly
  • Sesame wonton crisps
  • 1 (8.25-oz.) can mandarin orange segments, drained
  • 2 green onions, sliced
  • 6 tablespoons chopped cashews
  • Fresh orange-soy vinaigrette
  • Salt and pepper to taste

Directions

  1. Layer 1/2 cup salad greens, 1 sesame wonton crisp, 3 tbsp. salad greens, 1 sesame wonton crisp, and 1 tbsp. salad greens on a serving plate. Carefully tuck 1 tbsp. mandarin orange segments into salad greens.
  2. Repeat procedure with remaining salad greens, wonton crisps, and orange segments until prepared.
  3. Sprinkle with green onions and cashews. Drizzle with orange-soy vinaigrette.
  4. Sprinkle with salt and pepper to taste.
  5. Serve immediately.

Strawberry-Spinach Salad

Ingredients

  • ¼ red onion, thinly sliced
  • 2 (6-oz.) bags baby spinach
  • 1 (16-oz.) container quartered strawberries
  • 1 (4-oz.) package crumbled blue cheese
  • ½ cup sliced toasted almonds
  • Red wine vinaigrette
  • Salt and freshly ground pepper to taste

Directions

  1. Toss together red onion and next 4 ingredients in a large bowl. Drizzle with red wine vinaigrette; sprinkle with salt and pepper to taste.
  2. To change up the flavors, replace the almonds, blue cheese, and red wine vinaigrette with pecans, goat cheese, and balsamic vinaigrette.
