Apricot-Cherry Bars

What sort of sweet treats do you want to share with your loved ones. I’m happy, as part of Kathey Jo’s Kitchen, to share these delicious recipes with you and yours. My husband Rob loves these apricot cherry bars, and they’ve become family favorites in recent years. Chances are you’re looking for something new to feed your family to indulge their sweet tooth. If you want to combine the delicious tastes of many desirable sweet flavors, you’ve come to the right place!

Odds are you love the taste of yellow cake and the sweet fruity flavor of apricots. There’s finally a recipe that lets you combine these two sensations into a single dish! One issue with cooking for your loved ones and any guests who may come to your home is that you may be hesitant to prepare the same old dishes every time. But I’m happy to share these sweet recipes with you, giving family and friends something new to look forward to. Give them a try, and you’ll see it for yourself!

  • 1 package Super Moist yellow cake mix

  • 1/2 cup packed brown sugar
  • 2 eggs
  • 1 cup cut-up dried apricots
  • 1/2 cup drained chopped maraschino cherries
  • Powdered sugar

Heat oven to 375º. Grease and flour jelly roll pan, 15 1/2 × 10 1/2 × 1 inch. Beat half of the cake mix (dry), the water,

butter, brown sugar and eggs in large bowl with electric mixer on medium speed until smooth, or mix with spoon. Stir

in remaining cake mix, the apricots and cherries. Spread evenly in pan.

Bake 20 to 25 minutes or until toothpick inserted in center comes out clean. Cool completely. Sprinkle with powdered

sugar. Cut into 6 rows by 5 rows.

Make It Your Way

If you’d like, drizzle these bars with Cherry Glaze instead of sprinkling them with powdered sugar. To make the

glaze, use this easy recipe: Mix together 1 cup powdered sugar and 6 tablespoons maraschino juice until smooth.
